grilled lemon-butter salmon

Ingredients:
Β - 4 salmon fillets
Β - 1 TBL olive oil
Β - salt and pepper
Β Lemon Garlic Butter:
Β - Β½ cup butter - at room temperature
Β - 2 tsp finely chopped herbs
Β - 2 tsp minced garlic
Β - zest of 1 lemon - about 1/2 tspΒ Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β Β 

Preparation:

- Combine softened butter, herbs, garlic, lemon zest, and salt. Mash with a fork till combined.
Β - Pat the salmon dry with a paper towel, then drizzle with olive oil (rub all over with your fingertips) and season generously with salt and pepper.
Β - Grill salmon over medium heat for about 8 minutes, flip and grill 4-6 minutes longer. Fish is finished when it reaches 165 degrees F. internally.
Β - Remove salmon from heat and immediately top with a scoop of lemon garlic butter and serve as the butter melts. Enjoy!
