Avocado Stuffed with Lobster & Chipotle-Peach Salsa
Salsa: 1 fresh peach, skinned, pitted, and chopped
2 tbs. chopped red onion
1 tsp. minced chipotle peppers in adobo sauce
1 tbs. chopped cilantro
juice of half a lime
Mix all ingredients and chill. Stir in chunks of cooked lobster and serve in half a large, ripe avocado.
